For those lazy weekend mornings when you can sleep in and still have time to prepare breakfast, try these bacon-topped waffles! They are deliciously impossible to resist.

Ingredients
- cooking spray
- 8 slices bacon
- 2 tablespoons brown sugar
- 3 cups flour
- ½ cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 eggs
- 2 ½ cups buttermilk
- ⅔ cup vegetable oil
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Arrange bacon on the prepared baking sheet, and sprinkle with 2 tablespoons brown sugar. Bake in the preheated oven until bacon is crispy and brown sugar is caramelized, 10 to 15 minutes.
- Immediately remove bacon to a cutting board; cut into small pieces and set aside.
- Preheat a waffle iron.
- Whisk flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl; fold wet mixture into flour mixture. Add bacon and stir, being careful to not over mix.
- Spray the preheated waffle iron with cooking spray. Ladle batter into waffle iron and cook until golden brown; serve hot.

Weird. Eggy and sweet and sorta like a waffle. The bacon part was interesting so I’d be willing to cook the bacon and toss it in a different recipe but this one was odd. Edible. Okay, but odd.
YUM. but took out the bacon but other wise good without bacon but add cinnamon they are perfect and kinda fluffy

My family enjoyed it, but it seemed like a lot of work for minimal flavors. I’d rather make waffles, crumble bits of maple bacon on top, and then finish with syrup, as opposed to following this recipe. Others may enjoy it, but I doubt I’ll make it again.
I’ve made this recipe with brown sugar and without, I love the brown sugar bacon if….. I am serving the bacon as a side along with eggs. But…..brown sugar bacon gets “lost” in the waffles especially if you are putting syrup on the waffles, which we always do since the syrup is from our own maples. I don’t want to add brown sugar when it is not noticeable, I’ll keep mine separate from my waffles, both are delicious just not together.
I made this recipe as written and was very pleased with the results. Super yummy! I really liked having the bacon baked into the waffle. Here are my thoughts for next time… 1. Make the brown sugar bacon the day before. I wasn’t prepared for how sticky the bacon would be and it took a bit longer to chop than I expected. 2. Make more bacon than listed. Isn’t everything better with bacon? 3. I’ll add more brown sugar to the batter. 4. I might take the easier route and simply use Bisquik and add the bacon,vanilla, and brown sugar.

I made it as stated, and it was delicious! Definitely need to use a Belgium waffle iron. I think I got about 10 waffles out of it, so it makes a lot! I made them all up and then reheated them for the next several breakfasts.

These waffles are absolutely delicious! I froze the leftovers (I live alone) and they reheat perfectly in the Airfryer!
As a bacon affectionado .. there isn’t enough bacon in the recipe. Nice waffle batter.. but I think I will leave the bacon to the side and enjoy it that way!

High in sodium, but yummy. I think that the next time I make it, I’ll halve the recipe, but use the 8 strips of bacon.
Did not like the texture. Caramelizing the bacon was great and will try that way again.

I made it with Aunt Jemina Pancake Mix Original. Just cut the flour, baking powder, baking soda, salt, Buttermilk, and vegetable oil. Use what the box ask for and add everything else but the cut items.
