Brown Butter Waffles

Ingredients

  1. 12 tablespoons (1 1/2 sticks) unsalted butter
  2. 2 1/2 cups milk
  3. 1 1/4-ounce packet active dry yeast
  4. 2 cups all-purpose flour (or 1 3/4 cups plus 1/4 cup whole-wheat flour)
  5. 2 tablespoons sugar
  6. Kosher salt
  7. 2 large eggs, lightly beaten
  8. 1/4 teaspoon baking soda
  9. Waffle toppings (see below)

Instructions

  1. Make the brown butter: Melt the butter in a small saucepan over medium heat. Cook, swirling the pan, until lightly browned, 8 to 12 minutes. Skim off any foam; set the brown butter aside.
  2. Make the batter: Warm 1/2 cup milk in a small saucepan over low heat until it reaches about 110 degrees F. Transfer to a large bowl and sprinkle in the yeast (do not stir). Set aside until foamy, about 5 minutes. Whisk in 1/3 cup of the brown butter, reserving the rest for buttering the waffle iron. Whisk in the flour, sugar, 1 teaspoon salt and the remaining 2 cups milk. Cover with plastic wrap and let rise overnight at room temperature.
  3. Preheat the oven to 250 degrees F. Preheat a waffle iron; brush with the reserved brown butter. Stir the eggs and baking soda into the batter. Spoon 1/2 to 1/3 cup batter into the waffle iron and cook until golden. Transfer to a baking sheet and keep warm in the oven while you make the rest. Top as desired.
  4. Grape Compote
  5. Bring 5 cups seedless grapes, 1 cup sugar, the juice of 1/2 lemon and 2 tablespoons water to a boil in a wide skillet over high heat. Cook, stirring, until syrupy, 30 minutes. Off the heat, stir in 1 teaspoon vanilla and 3/4 cup chopped almonds; cool.
  6. Orange Glaze
  7. Heat 3/4 cup orange marmalade, 1/4 cup water, 2 tablespoons lemon juice and a pinch of salt in a skillet over medium-low heat, stirring, until warmed through. Remove from the heat and whisk in 4 tablespoons cold butter until smooth.
  8. Cran-Apple Relish
  9. Cook 3 chopped peeled apples in a skillet with 2 tablespoons butter over medium-high heat, 5 minutes. Add 1/3 cup cranberries, 1/4 cup sugar, 1 cup apple cider, 1 split vanilla bean and 1 strip orange zest. Simmer until syrupy, 8 to 10 minutes.

Hubby thinks this was the best waffle I have ever made!! I followed the suggestions of previous posters and added vanilla. I also want to add that these waffles reheated great. I kept the waffles in the fridge and put them in the toaster to reheat. Love this recipe.

really good and airy, i didnt let it rise overnight put about 1 tablespoon of vanilla used more suger and a touch of lemon also used 1/2 tsp of baking soda just used maple syrup. overall some work mot too much .original receipe had no taste but flour and butter so wiht some tweaks it was oscar-winning :

Not sure why there are poor reviews here… It takes some time to make these but they are soo worth it. These were the most airy waffles I’ve ever tasted. And the brown butter gave them a delicious nutty flavor that was super tasty. I went the extra step to make a raspberry compote instead of the orange they suggested and it paired beautifully.

Had absolutely no taste. Didn’t like the fact that I had to make part of it the night before and the rest the next morning….Plans changed quick for Xmas morning breakfast!!! Brown the butter the next morning, also. Waffles shouldn’t be this much work!!!!

The texture of these waffles was absolutely lovely- light, airy & crispy. The brown butter added a nice touch but overall they lacked flavor. They definitely needed more salt (I added about 1/2 tsp more and a tsp of vanilla. Also, the first few batches were much airier than the last few batches, as the baking soda lost its oomph. I’m not quite experienced enough in baking to know how to remedy that problem… using baking powder for its double acting quality? Although I wouldn’t know how to adjust the recipe accordingly…

These are the very best home-made waffles I have ever had. They are extremely light, flavorful, and hold up well after freezing and reheating in the microwave or oven.

Be sure to use a very large bowl when leaving the batter out overnight as the batter will expand and be all over your countertop, as it was mine! lol (As directed, don’t add eggs or soda until morning.}
