Ingredients
- 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), finely chopped
- 4 hard-cooked eggs, peeled and chopped
- 1 (8 ounce) package shredded Cheddar cheese
- ½ cup finely chopped onion
- ½ cup mayonnaise
- ¼ cup chili sauce
- ½ teaspoon salt
- ¼ teaspoon hot sauce (Optional)
- 12 hamburger buns, split
Instructions
- Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.
- Spread meat mixture over hamburger bun halves. Place on a baking sheet.
- Broil in the preheated oven until brown and bubbly, 5 to 10 minutes.
- Substitute Monterey Jack cheese for the Cheddar if desired.

Don’t be afraid, people! Try these. You will be amazed at how good they are. I use my round hand chopper and finely chop the eggs and Spam at the same time. Then stir in everything else and you’re ready to broil. The mixture keeps in the refrigerator for days so you can pop them in the broiler at the spur of the moment. Line the sheet pan with foil and you don’t even have a pan to wash!
