Ingredients

  1. 2 tablespoons clover or acacia honey
  2. 1 tablespoon hot water
  3. 1/2 ounce fresh lemon juice
  4. 1 ounce yuzu juice
  5. 1/2 ounce distilled nonalcoholic spirits (such as Seedlip Garden 108)
  6. Splash of ginger beer
  7. 1 bay leaf
  8. 1 mint leaf

Instructions

  1. Make the honey syrup: Combine the honey and hot water in a small bowl. Mix until the honey is dissolved.
  2. Make the drink: Combine the lemon juice, yuzu juice, spirits, ginger beer and 3/4 ounce of the honey syrup in a cocktail shaker filled with ice. Shake well.
  3. Strain the drink into a chilled coupe glass. Make a small incision in the bay leaf; poke the mint leaf through the slit. Garnish the drink with the bay-mint leaf.
