Breakfast SPAMadillas

A mouthwatering breakfast quesadilla made with flour tortillas and filled with eggs, SPAM, bacon, Colby-Jack cheese, and salsa. Serve with your preferred garnishes: sliced avocado, green onion, cilantro, pico de gallo, salsa, and sour cream.

Ingredients

  1. ½ cup diced SPAM® with Bacon
  2. 3 eggs
  3. 2 teaspoons water
  4. 2 large flour tortillas
  5. 3 tablespoons your favorite salsa
  6. ½ cup shredded Colby-Jack cheese

Instructions

  1. Heat a skillet over high heat; add SPAM with Bacon, reduce heat to medium and cook and stir until SPAM with Bacon starts to brown, 2 to 5 minutes.
  2. While SPAM with Bacon is browning, crack eggs into a bowl, add water and whisk thoroughly with a fork.
  3. Reduce heat to low; pour eggs into skillet. Cook and stir lightly until eggs are set.
  4. Remove SPAM with Bacon mixture from skillet.
  5. Turn heat up to medium and place first tortilla into skillet. Top with SPAM with Bacon mixture, salsa, and Colby-Jack cheese.
  6. Top with remaining tortilla. Cook until bottom tortilla starts to brown; flip carefully. Continue cooking on the other side until the cheese melts and tortilla starts to brown, about 5 minutes per side.
  7. You can sauté whatever veggies you like – onion, green pepper, jalapeno – with the SPAM product for additional flavors.

Great anytime of the day recipe. I made twice, with and without the salsa. Love salsa but in it, makes it too wet for and flimsy for our liking. But if you add to your egg mixture upon cooking as I like to do, then it’s perfect (love salsa in cooked eggs). However, for easy portability for little hands, leave the salsa off and put it on the side, which we liked better. Either way the recipe is really good.
