Breakfast Quesadillas

The Middle East as a whole enjoys this tea, which I first discovered during a recent trip to the UAE. Karak chai, roughly translated as “strong tea,” signifies tea. It is different from Masala chai in that it uses fewer spices, slightly more tea, evaporated milk, and lump sugar. I make a large quantity in the morning and consume it all day long. You can enjoy it either cold or hot.

Ingredients

  1. 1 pound bulk pork breakfast sausage (such as Jimmy Dean®)
  2. cooking spray
  3. 6 eggs
  4. ¼ cup milk
  5. ½ pound shredded Cheddar cheese (such as Kraft®)
  6. ¼ cup butter
  7. 24 flour tortillas, at room temperature

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Let sausage cool.
  2. Spray a large skillet with cooking spray; warm over medium-high heat. Beat eggs with milk in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes. Set aside to cool.
  3. Spread butter over 1 side of each tortilla. Heat a skillet over medium heat. Place a tortilla, buttered-side down, in the skillet. Top with a layer each of the sausage, eggs, then cheese. Top with another tortilla, buttered-side up. Cook until golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Repeat with remaining tortillas and filling.
  4. Slice quesadillas into quarters. Serve.

I really enjoyed this easy breakfast! I made it just for one by cooking 2 oz sausage, and then scrambling 1 seasoned egg. I put 1/2 oz grated cheese on 1/2 of a low carb tortilla, layered the egg and then sausage, topped it with 1/2 oz cheese, and then folded the tortilla over all of it. I browned it and crisped it up as written. Delicious!

These were very good. I seasoned the eggs with salt and pepper before cooking them, which I think helped boost the flavor a bit. Next time I’d add some green chilies to the egg mixture for a more southwest flavor or maybe sauté some onion and pepper with the sausage. At any rate, they taste great and are easy to make.

We really enjoyed these. I had mine on keto-friendly tortillas while my family enjoyed them on flour tortillas. I felt like maybe it could use a little more flavor (maybe dip it in salsa or something similar) but they were still delicious as is. Very flexible dish, not to mention quick to prepare!
