Ingredients
- 1 prepared thin pizza crust (about 10 ounces), such as Boboli
- 3 tablespoons extra-virgin olive oil
- 8 large eggs
- 1 (10-ounce) package frozen chopped spinach, cooked and squeezed dry, reserving 1 tablespoon of the liquid
- 1 cup chopped onion, about 1 medium onion
- Kosher salt
- Freshly ground black pepper
- 1/2 cup shredded Cheddar
Instructions
- Preheat the oven to 450 degrees F.
- Brush the pizza crust on both sides with 1 tablespoon olive oil. Place crust directly onto the middle rack of the oven and bake for 10 minutes.
- While the crust is cooking, break the eggs into a bowl and add the reserved spinach liquid. Whisk them well and season them with salt and pepper. Add the remaining 2 tablespoons olive oil to a 10-inch skillet and heat over medium heat. Add the onions and cook until translucent, about 4 minutes. Add the dry spinach, breaking up the pieces, and heat through, about 2 minutes. Scrape the vegetable mixture into the eggs and beat it well to distribute the spinach evenly. Turn the heat down to low and pour the egg mixture back into the pan. Gently stir the eggs until they are just set and still moist, about 3 to 4 minutes.
- Spread the egg mixture evenly onto the baked pizza crust and top with the cheese. Return to the oven until the cheese is melted and lightly browned, about 1 minute. Serve hot.

I made it with 10 eggs and a can of the Popeye’s spinach. I used the Kosher salt and black pepper with a bit of parsley. Followed the recipe much as possible but I used Monterey cheese mix which was great. Baked it for 15 minutes on 450. Had some HF Polkas Kielbasa simmered on the side. It was so easy. Eas recipe, but the taste was more for brunch than breakfast.
Good basic recipe. I cut the crust (birolli) precook time down to 6 min., so the cheese would have enough time to melt without over cooking the crust. I also used the following ingredients: bacon, ham, bell pepper, onion, garlic,mushrooms and frozen chopped spinach that I added garlic salt, oregano and black pepper to. I sauteed the meat and vegetables and then poured in the eggs. After the eggs set, I added this to the pizza and sliced cherry tomatoes on top and then added parmesan, cheddar and mozzarella and cooked the remaining 4 minutes. Good flavor but next time I think I’ll use pizza sauce because it was a bit bland without it.
This was great! Made it for our Christmas brunch – my picky toddler loves pizza and also loves scrambled eggs/cheese…so…I gave it a shot. He loved it…funny how he never gives me trouble when veggies are ON a pizza. Turns out mom & dad think it’s pretty yummy, too! I added chopped mushrooms, used fresh spinach, added a little mozzarella cheese, made my own dough the night before and added garlic powder to the egg/veggie mix and to the dough. YUM. Will make again…a very inexpensive, yummy dinner!!

I make this pizza all the time. My family enjoys and it’s healthy. I use a whole wheat pizza crust. Yum!
Made this with flat bread crust but followed the rest of the recipe. I think even with “real” pizza crust it would be sorta boring. Not bad, just not interesting.
I made this for Saturday morning breakfast during my in-laws’ recent visit. Made my own crust and pre-baked for about 15 minutes. Also added sauteed peppers and onions, which were delicious. A big hit!
I used the smaller boboli crusts (2 for this recipe) and had extra of the egg mixture.
