Ingredients
- One 22-ounce bag waffle fries
- 1 cup black beans, rinsed and drained
- 4 slices cooked bacon, cut into 2-inch pieces
- 8 ounces Monterey Jack cheese, grated (2 cups)
- Nonstick cooking spray, for the skillet
- 4 large eggs, lightly whisked
- Kosher salt and freshly ground black pepper
- 2 ripe avocados, halved, pitted and peeled
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice (from about 1/2 lime)
- 1 plum tomato, diced
- 1/2 serrano chile, seeded, deveined and minced
- 2 tablespoons chopped fresh cilantro
- 1/2 red onion, thinly sliced
- 2 scallions, thinly sliced
Instructions
- Preheat the oven to 425 degrees F.
- Cook the waffle fries according to the package instructions on a parchment-lined baking sheet.
- Remove the fries from the oven and top with the black beans, bacon and cheese. Return to the oven until the cheese melts and is bubbling, about 5 minutes.
- Meanwhile, heat a medium nonstick skillet over medium heat. Spray the skillet with nonstick cooking spray. Pour the eggs into the hot skillet. Cook, stirring occasionally, until the eggs are just cooked and opaque yellow, 2 to 3 minutes. Season with salt and pepper.
- While the eggs are cooking, make the guacamole. Combine the avocados, garlic, lime juice and salt and pepper to taste in a mixing bowl and mash with a fork until chunky. Add the tomato, serrano and cilantro and mix well.
- Remove the fries from the oven and top with the red onion, scallions and cooked eggs. Dollop dabs of guacamole evenly around the nachos. Serve immediately.

Family loved this for New Year’s Day brunch! So colorful! Pickled the red onion slices, used Pepper Jack instead of Monterey Jack and added an extra slice of bacon. 🙂
This has become our go-to when we host brunch. Great way to feed a crowd!
Very tasty! However, if you think you might have leftovers don’t add the guacamole. Let each person add their own. Guacamole doesn’t reheat well.
I also cooked the waffle fries longer to give them a crispier outside. I recommend prepping most the toppings before cooking the waffle fries. I didn’t want to have the fries sitting out to long.
Many people who are great cooks love finding new and original recipes to share with friends and family! I am an experienced cook who will show my skills by staying on top of recipes and preparing them often.
As far as I know, only Alex & GZ are actual Iron Chefs. All of them have their hits and misses over time. The person who wrote the last review sounds like a food snob who likely has never prepared anything like Beef Wellington or Braised Short Ribs over Polenta – probably never cooks anything from scratch – just reheats what is delivered.

Great breakfast dish. My family and friends loved it. Easy and tasty
The Kitchen is my favorite show because they have all kinds of recipes that work for my family. GZ, Jeff, Katie and Sunny make a great team and are fun to watch. I enjoy Alex when she is on too. They have differrent backgrounds which adds so much to the show. I love when they add a tip or teach something aobut how to selelct, prepare or cook an ingredient. Fennel is an example of a vegetable I didn’t know how to prepare and made a dish and it got a Wow!! On the other hand, I think everyone should be allowed to express their opinion and not be osttracized because of it. There may be others out there who are looking for something else in a cooking show and their voices should be heard without criticism. Barbara V.
We are always looking for quick and easy breakfast ideas for company. This one nailed it, and I would never have thought to do this; now we can switch it up to use on-hand items. I am someone who knows how to cook, but I still learn some little trick that makes life easier during each episode of The Kitchen. Thanks a bundle!
It was so easy to assemble and absolutely delicious!!! We made a few changes to accommodate for a food allergy and it was so easy to adapt!!!
