Ingredients

  1. ⅓ cup vegetable oil for frying
  2. 1 ½ cups cornmeal
  3. ½ cup all-purpose flour
  4. 1 tablespoon seasoned salt
  5. 1 tablespoon kosher salt
  6. ½ tablespoon lemon pepper
  7. ½ teaspoon ground white pepper
  8. 3 large eggs
  9. 6 salmon fillets

Instructions

  1. Heat oil in a cast iron skillet to 350 degrees F (175 degrees C).
  2. Whisk together cornmeal, flour, seasoned salt, kosher salt, lemon pepper, and white pepper in a medium bowl.
  3. Beat eggs in a separate bowl for 10 seconds.
  4. Working one at a time, dip salmon into beaten eggs to coat completely. Dredge salmon in cornmeal mixture to cover completely. Shake off excess.
  5. Working in batches, fry salmon in hot oil, flipping halfway, until a golden brown crust forms, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  6. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. Amount will vary depending on cooking time and temperature, ingredient density, and specific type of oil used.

I usually do not eat salmon of any kind, and it just so happens that by accident we picked up the wrong pkg of frozen fish to bring home from the store, anyway to make a long story short we decided to cook the salmon because I did not feel like going back to the store and we used this recipe …. ..Everyone including myself now loves pan fried salmon.,,thank you for posting this recipe.

I didn’t have any lemon pepper so I used Mrs. Dash. I just used plain black pepper as well.
