Bread Machine Hawaiian Sweet Rolls

With just the right amount of sweetness, these rich pineapple buns taste delicious.

Ingredients

  1. 1 cup pineapple juice
  2. ⅓ cup milk
  3. 1 large egg
  4. 4 tablespoons unsalted butter
  5. 1 teaspoon coconut extract
  6. 3 ½ cups bread flour
  7. ½ cup dry potato flakes
  8. ⅓ cup white sugar
  9. 1 teaspoon salt
  10. ⅓ teaspoon ground ginger
  11. 1 ½ teaspoons active dry yeast

Instructions

  1. Place pineapple juice, milk, egg, butter, coconut extract, bread flour, potato flakes, sugar, salt, ginger, and yeast in a bread machine in the order listed, or according to manufacturer’s instructions. Run Dough cycle. Remove dough after cycle has ended, about 1 hour.
  2. Form dough into rolls, place on a baking sheet, and let rise for 1 hour.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Bake in the preheated oven until golden, about 20 minutes.
  5. You can use vanilla extract instead of coconut.
  6. You can freeze individual rolls before baking. Simply thaw frozen rolls and let rise. Bake as instructed.
  7. We discovered that we like these rolls to be baked apart rather than squished in a pan like in my photo.

This was super easy to make and my rolls came out better than expected. I followed the recipe except substituting vanilla extract for the coconut extract and using traditional baking method instead of a bread machine. I used my kitchen aid mixer with the hook attachment to form the dough. I then kneaded the dough on a floured surface, forming it into a ball. I lightly oiled a bowl and placed the dough in the bowl, rolling it around inside the bowl to get coated with oil. The bowl was placed inside my oven and covered with a damp cloth for proofing for 1 hour. I then continued with the recipe from Step 2.

These rolls were beautifully fluffy sweet did not disappoint in any way. My grandkids had one each while they were still warm and couldn’t keep them away from my kitchen once I made them. Will definitely make them again.
