Ingredients
- 1 pkg. Johnsonville® Mild Italian Sausage links, coin sliced
- 2 tbsp. extra virgin olive oil
- 2 med. onions, coarsely chopped
- 4 med. carrots, cut into 1″ chunks
- 4 small parsnips, cut into 1″ chunks
- 8 oz. baby bella or white button mushrooms, halved
- 2 stalks celery, cut into 1″ chunks
- 3 cups chopped swiss chard, stems removed, roughly chopped
- 1/2 cup barley, uncooked
- 1 28 oz. can Italian plum tomatoes (in juice)
- 1 14.5 oz. can chicken stock
- 1 cup dry white wine
- 1 tsp. Italian seasoning
- 1/2 tsp. ground black pepper
- 1/2 tsp. salt
Instructions
- Heat oil in a large Dutch oven over medium heat. Add onion; cook 3 minutes or until slightly soft. Add sausage links to pan; cook 12 – 14 minutes or until sausage is browned and almost cooked through.
- Remove sausage links to cutting board and allow them to cool before coin slicing. Stir in carrots, parsnips, mushrooms, celery and Swiss chard into the Dutch oven. Add the barley, tomatoes, stock, wine, Italian seasoning, salt and pepper. Add sliced sausage to the pot. Stir to combine all the ingredients.
- Bring to a boil, cover, reduce heat and continue to simmer for up to 1 hour or until the barley is cooked. Serve with crusty Italian bread.

I’m giving this a 3.5 – 4*. My husband really liked it but I thought it was a little on the bland side. I tried adding a dash of hot sauce to my bowl, but I didn’t care for that. On another bowl, I topped it off with a good quality parmesan cheese and that seemed to help a bit. I’ll probably make it again because my husband liked it so much and it’s extremely healthy. That always scores high with me. I think maybe the parsnips made it a little sweeter than most soups. I might try cutting back on the amount next time.
Wonderful flavor just right substance made us feel good after we had the meal. Very light compared to most sausage dishes. The whole family loves this dish. Very easy to make even for a rookie like me.
Extremely bland, and Johnsonville sausages aren’t very good any more. I used them all the time, but now I use store made instead. It’s like they use lesser quality ingredients now that prices are rising on everything. I’d rather pay a premium than get an inferior product.
Oh my gosh! This is truly a 5 star meal! It is hearty yet healthy with a variety of wonderful vegetables. My neighbor just happened to drop by with a caprese salad sample for me as I was finishing this dish. He immediately noticed the delightful smell that filled my kitchen and had to have a taste. He echoed my enthusiam. I gave him a large bowl of it to take home for dinner tomorrow night because he had already eaten. This dish has made two families very happy!
