Braised BBQ Pulled Pork

Adapted from a barbecue sauce recipe in the West Virginia cookbook “Mountain Measures” that I grew up with, this dish has pulled pork cooked in a fiery, acidic West Virginia-style barbecue sauce. Additionally, it tastes great when made with more water and used over mashed or baked potatoes.

Ingredients

  1. 1 (3 pound) pork tenderloin, trimmed
  2. 1 teaspoon salt
  3. 1 teaspoon ground black pepper
  4. ½ cup cider vinegar
  5. ⅓ cup water
  6. 1 large onion, chopped
  7. 2 tablespoons prepared yellow mustard
  8. 2 slices lemon, seeded
  9. 1 tablespoon unsalted butter
  10. 2 teaspoons honey
  11. ½ teaspoon cayenne pepper
  12. 1 cup ketchup
  13. 4 tablespoons Worcestershire sauce

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Heat a Dutch oven over medium-high heat. Season pork with salt and pepper. Sear in the hot Dutch oven on all sides, about 5 minutes total. Remove and set aside.
  3. Combine vinegar, water, onion, mustard, lemon slices, butter, honey, and cayenne in the Dutch oven and simmer for 20 minutes. Remove lemon. Add ketchup and Worcestershire sauce and return to a boil; add pork and cover tightly with a lid or foil.
  4. Braise in the center of the preheated oven until meat shreds easily with a fork, about 3 hours. Check occasionally to see if a little water should be added. Remove from the oven and shred pork into sauce using 2 forks.
  5. Could also be done completely on the stovetop, but be sure to stir occasionally and keep it just at a simmer.
  6. I usually end up with right about 8 cups BBQ pork
  7. I have also done the same thing with chicken breast – I use whichever I have or is on sale that week. Growing up, my mother cooked a whole cut-up chicken in the sauce (with more water), removed the bones, and served over mashed potatoes.
