Ingredients

  1. 2 mangos
  2. 1 (4 pound) pork shoulder roast
  3. 2 tablespoons ground black pepper
  4. 1 teaspoon kosher salt
  5. 2 teaspoons chipotle chile powder, divided
  6. ¼ cup balsamic vinegar
  7. 2 cups water
  8. 2 teaspoons honey
  9. 1 (1.5 fluid ounce) jigger bourbon whiskey
  10. 2 (12 ounce) bottles barbecue sauce

Instructions

  1. Peel mangos and remove the pits. Place the pits into a slow cooker, then roughly chop the mango and set aside. Place pork shoulder into the slow cooker and season with pepper, salt, and 1 teaspoon chipotle powder. Pour in balsamic vinegar and water.
  2. Cover and cook on Low until the meat is very tender, 5 to 8 hours. Once done, drain the pork, discarding the cooking liquid and mango pits, and shred with two forks.
  3. While pork is cooking, purée chopped mango in a blender until smooth, then pour into a saucepan along with honey, remaining chipotle powder, and whiskey. Bring to a simmer. Reduce heat to medium-low and simmer, stirring frequently, until mango has reduced and darkened slightly, about 10 minutes. Stir in barbecue sauce and remove from the heat.
  4. Return shredded pork to the slow cooker and stir in mango barbecue sauce. Cover and cook on High until pork absorbs the barbecue sauce, 1 to 2 hours.

I have made this recipe for small groups of 10 to large groups of 100. Always a hit. Instead of using chipotle powder, I use canned chipotle peppers. Coarsely chop a small can to cook with the pork in balsamic vinegar and water. I also use several peppers when I puree the mango in the blender. I also add a cup of Woody’s BBQ concentrate to get a smokey taste to the sauce. The canned chipotle peppers bring a nice hint of heat, which is countered with the mango and honey. I also start adding the bbq sauce in small quantities so it will not overpower the mango bourbon base.

I think the recipe is okay. To me I would add less bar b que sauce because it overpowered the mango and definitely add the honey. I had crusty rolls and made a meal with this pulled pork recipe. I would definitely make this again but adjust the ingredients slightly.

Tangy and sweet with a little bit of a zing. Loved it. I diced the mangos quite small then used a whisk to blend the honey and bourbon until it was soupy. Kept the mangos a bit “chunky” because I happen to love mangos. Substituted ground Cayenne Pepper and Chili powder instead of the Chipolte.

This was absolutely flavorful!!! My kids loved it!!!! Tweaked it a little by using 2 cans of mangos and adding some brown sugar to step 1. I placed about 6 slices of the mangos from the can and poured the juices from the can of mangos into the slow cooker. Also made sure that the there was enough water covering the pork while it was in slow cooker. Absolutely loved it and it was ono- good with laulau!!!

This was absolutely delicious. Unfortunately I had to use regular chili powder as I failed to purchase the chipotle chili powder. It was still amazing. My roast was 6 pounds so I increased the other ingredients by I 1/2 times to compensate for the larger piece of meat as well as cooking longer. I did cook for the full 2 hours after adding the sauce to the shredded pork at the end. Yum yum. It is a keeper. Next time I will be sure to purchase the correct chili powder. I forgot to mention that I made the absolutely awesome barbecue sauce to use in this recipe also from this website, but following another reviewers suggestion used bourbon instead of rum.

This was good. I did not do it as suggested. I did the smokey Applewood Grill Mates for the seasoning. I did do the two Mango seeds at the bottom. I did 1/2 cup of water and not 2 cups by mistake. I put at 8 hours in the slow cooker and came out great! I think 2 cups would have been too much. Only used on bottle of BBQ sauce. That was plenty.

Love this dish! Had it for lunch at work, people tried to steal it! For fun, the second time I made it, I added a bit of crushed pineapple and its juice to the puréed mango. It added just a bit sweetness and tartness and made it even yummier!
