Bourbon Chocolate Frosting

Ingredients

  1. 12 ounces unsalted butter, room temperature
  2. 1-ounce mayonnaise
  3. 6 ounces semisweet chocolate, melted and cooled
  4. 1 pound powdered sugar
  5. 2 tablespoons bourbon
  6. Pinch kosher salt

Instructions

  1. Beat the butter and mayonnaise in a stand mixer fitted with the paddle attachment, on high until light and fluffy, approximately 3 to 4 minutes. With the mixer on low, slowly pour in the melted chocolate. Continue mixing on low speed until all of the chocolate is incorporated, stopping to scrape down the sides of the bowl as needed. Turn off the mixer and add 1 cup of the sugar. Mix on low to combine. Stop to scrape down the sides of the bowl. Repeat until all of the sugar has been incorporated. Add the bourbon and salt and continue to beat until the frosting is smooth and lightens slightly in color, 2 to 3 minutes. 
  2. Use immediately or store in an airtight container at room temperature for up to 4 hours or refrigerate for up to 1 week. Bring to room temperature before using chilled frosting.

Added to a vanilla cake and everyone loved it! It’s a more sophisticated version of chocolate frosting. I did cut back the sugar by 1/2 cup because I like my frosting a little less sweet. The mayonnaise seemed like a weird ingredient, but I trusted the recipe and it turned out great. Will definitely make it again!

Absolutely Fantastic! It was a perfect consistency for topping cupcakes. I added a little bit more bourbon for the extra flavor though, but its delicious either way. Definitely going to be made again!

This recipe is easy and versatile. Makes great, fluffy frosting but it’s too much for a two-layer 9″ cake. You can substitute butterscotch chips and vanilla extract to make a wonderful butterscotch frosting.
