Bobby’s Signature Mojito

Ingredients

  1. 2 lime wedges
  2. 6 mint leaves
  3. 4 Thai basil leaves
  4. 1 tablespoon Ginger Simple Syrup, recipe follows
  5. 1-ounce club soda
  6. 1-ounce white rum
  7. Fine sugar
  8. Ice
  9. Coconut milk
  10. 1/2 cup sugar
  11. 1/2 cup water
  12. 1 (2-inch) piece ginger, thickly sliced

Instructions

  1. Place the lime, mint and Thai basil in a cocktail shaker and muddle well. Add Ginger Simple Syrup, club soda, and rum and shake well.
  2. Rim a glass with fine sugar and fill with ice. Pour drink over ice. Float coconut milk on top of the drink.
  3. Combine all ingredients in a small saucepan. Bring to a boil and cook until the sugar is dissolved. Remove from the heat and cool. Once cool, strain out the ginger.

I love this recipe! A regular mojito seems so plain now! I have tweaked the ingredients a tad to Coconut Rum instead of Coconut milk which is hard to find in Northeast Ohio. This also increases the alcohol content which is a plus!

I made this mojito for my dinner club and it was a hit. The extra flavor of the ginger and basil was a good twist on a traditional mojito and went well with our Asian themed dinner. I did leave off the coconut milk as it didn’t look appetizing on top of the drink. Other than that, it was great.

Regular basil works, too. I really liked the updated taste of the basil and ginger. And, yes, he also used pineapple on TV. Terrific summer drink!
