Blueberry-Thyme Compote

The ideal topping for vanilla ice cream, cheesecake, custard, pana cotta, grilled meats like chicken or pork, or simply to dress up a simple bowl of oatmeal is a straightforward blueberry and thyme compote.

Ingredients

  1. 1 ½ cups fresh blueberries
  2. 3 tablespoons white sugar
  3. 1 lime, juiced
  4. 3 sprigs fresh thyme, leaves stripped and chopped

Instructions

  1. Combine blueberries, sugar, lime juice, and thyme leaves in a small saucepan over low heat. Bring to a simmer and cook until sauce starts to thicken, 15 to 20 minutes.

Easy and tasty but a little too sour for our taste. I would use less lime and substitute a little water for it. I used a bit more sugar too. Generally though – this was great on our cheesecake. I didn’t realize how it easy it was to make a quick compote!
