Blueberry Overnight Oats

Instructions

  1. Mix 1/2 cup rolled oats, 1 tablespoon ground flaxseed, 2/3 cup milk, 1/3 cup plain yogurt, 2 teaspoons brown sugar and a pinch each of salt and cinnamon in a small jar. Add 1/4 cup crushed freeze-dried blueberries and 1/2 chopped banana. Cover and refrigerate overnight. Top with fresh or frozen berries.

I love this recipe. Biggest thing I did different was used fresh blueberries. I thought it turned out great. Tried a couple other recipes and the end result tasted very bland. This one is seasoned well and gives the end product a nice balanced taste. Can’t wait to try it with other flavors!

I’m going to start by saying that I couldn’t find dehydrated berries so I used dehydrated strawberries instead. The recipe itself was very simple to make. It only added 5 minutes to my nightly routine and presto I had breakfast ready for in the morning which, in turn, saved me time in the morning too. The taste itself is a good balance. It’s not too sweet and it’s not too bland. The recipe makes about a cup and a half of oatmeal. A decent breakfast if you like oatmeal.
