Blueberry Buttermilk Clafoutis

The classic Japanese rice roll is given a modern twist by the California roll. It is fresh, crunchy, and filling because it is filled with avocado, crab, and cucumber. Use either genuine or fake crab.

Ingredients

  1. 1 teaspoon butter
  2. 1 (10 ounce) package frozen blueberries
  3. 9 tablespoons all-purpose flour
  4. 1 pinch baking powder
  5. 1 pinch salt
  6. 1 cup buttermilk
  7. 3 eggs
  8. 6 tablespoons white sugar
  9. 1 teaspoon grated orange zest
  10. 1 teaspoon vanilla extract
  11. 1 tablespoon brown sugar, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with butter.
  2. Place a layer of blueberries into the prepared baking dish.
  3. Combine flour, baking powder, and salt in a small bowl. Whisk together buttermilk, eggs, and sugar in a large bowl. Add flour mixture to buttermilk mixture and stir until batter is smooth. Mix in vanilla extract and orange zest. Carefully pour over blueberries in the baking dish.
  4. Bake in the preheated oven until set, about 30 minutes. Sprinkle with a thin layer of brown sugar. Return to the oven and bake until sugar is lightly browned, 10 to 15 minutes. Serve warm or cold.
  5. You can, of course, use fresh blueberries if you prefer.

I’m surprised how easy this was to make. I didn’t have buttermilk so I added 1T of vinegar to a cup of milk and let it sit for about 10 minutes. And, I used the whole 16 oz of fresh blueberries; glad I did cause I’m getting blueberries in every bite. Everything went well into a 9 inch pie dish. Again, this was easy to make in hardly any time and I thoroughly enjoyed eating it. Thanks for posting. Will make this again.

Doubled the recipe, cause I’m feeding three growing children and a husband, and used the mixed berries I use for my smoothies. HUGE hit! The kids love it! The husband actually ate breakfast and it was super satisfying! Definitely a new weekend treat in our house!
