When blueberries are in season, you should create this simple yet tasty meal. It’s a terrific summer dessert because you don’t need to use the oven.

Ingredients

  1. 1 cup all-purpose flour
  2. ¾ cup packed brown sugar
  3. ½ cup rolled oats
  4. ¼ cup graham cracker crumbs
  5. 1 teaspoon ground cinnamon
  6. ½ cup melted butter
  7. 3 ½ cups peeled and sliced apples
  8. 1 ½ cups blueberries
  9. 1 tablespoon lemon juice
  10. ¼ cup white sugar
  11. 2 tablespoons cornstarch
  12. 1 cup cold water
  13. 1 teaspoon vanilla extract

Instructions

  1. Grease a microwave-safe 2-quart casserole dish.
  2. Mix flour, brown sugar, oats, graham cracker crumbs, and cinnamon together in a bowl; stir in butter until well mixed. Press 1/2 the oat mixture into the prepared casserole dish. Spread apples and blueberries over oat mixture; drizzle with lemon juice.
  3. Stir white sugar and cornstarch together in a microwave-safe bowl; mix in water and vanilla extract until smooth. Heat sugar mixture in the microwave, stirring every 45 seconds, until sauce is thick and nearly clear, 2 to 4 minutes. Pour sauce over fruit layer and sprinkle remaining oat mixture over top.
  4. Heat in microwave at 70 percent power until fruit is tender and juice is bubbling, 8 to 10 minutes. Cool slightly before serving.
  5. Can use frozen blueberries that are thawed and drained.

Prior to making It, I perused the 3 other reviews. One noted it to be soggy. I made it using 3/4 cup of water and was making it for guests we were entertaining, finding it easier to do the final cook in the oven rather than tending to it in the microwave. I cooked it at 350 F for about 35 minutes. Turned out very well, not soggy. All of us thought it was delicious. Thank you for the recipe.

I’ve made this a few times and it’s very good. I didn’t realize until I was in the process of making it that it is cooked in the microwave. It’s very easy to make. I’ve switched apples with peaches a few times. I don’t think it needs the white sugar, especially if you use peaches. The leftovers get really soggy, so I pop each serving in the microwave again.

Super easy recipe….and super tasty!! I followed the recipe, exactly as it said. I did have to add time, to allow it to cook, but my microwave is getting old. Thanks for the great recipe…I will make it again!!
