I enjoy serving this with butternut squash or sweet potatoes. The small beef loaves are simple to store and reheat, and I believe they taste even better the second day. Ingredients
- 1 ½ pounds lean ground beef
- ¾ cup crumbled blue cheese
- ½ cup diced onion
- ½ cup Italian bread crumbs
- ½ cup chopped fresh spinach
- 2 eggs
- 2 tablespoons Worcestershire sauce
Instructions
- Preheat an oven to 375 degrees F (190 degrees C). Grease a large muffin pan with cooking spray.
- Combine ground beef, blue cheese, onion, bread crumbs, spinach, eggs, and Worcestershire sauce in a large bowl until well blended. Divide meat mixture evenly into the prepared muffin pan.
- Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Much better than I expected! Honestly the best meat loaf i’ve ever made. The flavors meld perfectly together and the blue cheese is much less sharp than I would’ve expected.

Interesting flavor, easy prep. I did increase spinach as suggested by others and enjoyed the taste. I served it with Roasted rosemary butternut squash from this site and it was a perfect accompaniment. Will make this again.
I used onion powder instead of onions as I am allergic to cooked onions and I only had plain bread crumbs so I added some Italian spices.
This was a nice change, but my family definitely prefers a sweeter, glazed meatloaf. I enjoyed the blue cheese and spinach combination, but the kids definitely weren’t having it. The flavor was a little too grown up for them. I will probably freeze the remaining muffins and take them for lunch until they’re gone.
My blue cheese hating husband didn’t believe there was blue cheese in these! these were super easy to make and everyone in the family loved them. I used dehydrated onions since typical onions give me tummy issues and I added salt and pepper. Those were the only modifications I made and they turned out great!
I made these muffins with ground venison. They were very good. I noticed the recipe doesn’t call for salt, and I figured it might have enough from the boxed Italian bread crumbs. But I thought it will benefit next time from addition of a teaspoon of salt. I also added some garlic powder. Not the best meatloaf I’ve ever had, but I’ll probably make this again.
I make it as is in a hand-made loaf and have many times. It’s always a winner. I try to make it double so to have cold meatloaf sandwiches later.
This is the first time (in almost 49 yrs) my husband has EVER asked me to make meat loaf again! He loved this recipe and the portion size is perfect. Next time I make it, I might try to spice it up a bit but frankly adding some bbq sauce to my serving was excellent.
Quick and easy dinner option. Could definitely up the bleu cheese and spinach to a half cup each (meat to veg/cheese ratio a little off). Definitely will make again.
