Blackberry Shakes

Ingredients

  1. 1 pint fresh blackberries
  2. 2 to 4 tablespoons sugar (depending on berries sweetness)
  3. 1 pint vanilla ice cream
  4. 12 ounces pomegranate juice
  5. 1 cup milk

Instructions

  1. Combine all but a few blackberries and sugar in a small saucepan and cook over high heat until the sugar has melted and the berries are soft and just starting to break down.
  2. Put the cooked berries, the ice cream, pomegranate juice and milk in a blender and puree until thick and creamy. Pour into tall glasses and garnish each glass with a few berries.

The recipe calls for 2-4 tbsp sugar depending on berries sweetness. My berries were rather tart, so i added 3 tbsp. This was a mistake. I should have added only 1 or 2 tbsp. The pomegranate juice, milk, and especially vanilla ice cream are sweet enough. I did cook the berries for a minute on the stove just as it called for, which i think helped the taste. The shake turned out a little runny, so put it in the freezer for 20 minutes to get it colder and thicker. Overall, it was pretty refreshing. Just a little too sweet for my taste. I will try again with less sugar.

The family and I went out in mid-July to pick blackberries. I got a bit over zealous picking and came home with several pounds of blackberries. Not having any ideas how to prepare blackberries, other than popping them in your mouth, I came to Food Network for ideas. I halved this recipe, and only used 1 tablespoon of sugar. I couldn’t get my hands on pom juice either, so I used pom cocktail. I also didn’t cook the blackberries down…they’re getting pureed in a blender, why would you need to break them down? Easy and quick. My shake was much more purple than the picture, but tasted very good. If you can stand the seedy pulp, it is a tasty, refreshing shake.

I just made this shake. It is terrific. Cooking the blackberries just slightly with sugar was a good idea to make sure they are not sour. Pom juice bumps up the flavor. Beautiful color too.
