Ingredients
- 3/4 cup granulated sugar
- 2 cups plus 1 tablespoon self-rising flour
- 2 cups fresh blackberries
- 1/4 cup unsalted butter, cold and cut into small pieces
- 1/2 to 2/3 cup milk
- Vanilla ice cream
Instructions
- Preheat the oven to 450 degrees F. Butter a 1-quart casserole dish or baking pan.
- Combine the sugar with 1 tablespoon of the flour, the berries and 1 cup of water in a medium saucepan. Bring to a boil, reduce the heat and simmer for 2 minutes. Remove from the heat and set aside.
- In a medium bowl, use a pastry blender or two knives to cut the butter into the remaining 2 cups of flour until small crumbles start to form. Slowly stir in the milk, adding just enough so a soft dough starts to form and isn’t sticking to the sides of the bowl. Once formed, place the dough on a lightly floured cutting board and use your hands to pat it into a square. With a rolling pin, roll the dough to 1/2 inch thick and then cut the dough into 2-inch-wide strips.
- Pour 1 cup of the blackberry mixture into the bottom of the buttered dish. Closely line half of the dough strips on top of the blackberry mixture. Bake for 12 minutes or until the dough starts to brown. Remove from the oven and pour the remaining berry mixture over the baked strips. Closely line another layer of dough strips on top and bake for another 12 minutes or until the dough has browned. Serve warm with a scoop of vanilla ice cream.

Made this as an easy, quick last minute Valentine’s Day dessert. Next time I would use only 1/4 cup of sugar, though, because it was REALLY sweet.

This is a repeat of the same blackberry cobbler in her list of recipes. FYI….this one has left out the cup of water in the list of ingredients. 3 Tablespoons of water is enough BTW as the water she says to use is way too much. This is not good period. The dough is awful and another cup of berries would help. Ice cream on top didn’t even convince my family to eat this. It is just NOT a good cobbler. The other recipe has more honest and accurate ratings. Don’t waste good ingredients by making this. I was sad to have to throw this out.
This sounds very yummy and I am gonna make it for our church dinner Wednesday night.
A few things seemed a little off about this recipe. First off, two cups of blackberries is nothing. I ended up using 4 cups, otherwise it would have just been dough with a sprinkling of berries. Also, boiling the berries for 2 minutes basically just gave me berries in hot water, so I strained out the berries with a slotted spoon and reduced the remaining liquid down, then poured it over the dough and berries. The dough is plain, I would recommend a dash of cinnamon and/or ground ginger. Otherwise the cobbler was fine.
