Black Pepper and Sage Biscuits

Ingredients

  1. 6 cups all-purpose flour, plus more for dusting
  2. 2/3 cup powdered milk
  3. 2 tablespoons baking powder
  4. 2 tablespoons granulated sugar
  5. 1 tablespoon kosher salt
  6. 1 tablespoon coarsely ground black pepper
  7. 1 tablespoon cream of tartar
  8. 2 teaspoons ground sage, finely chopped
  9. 2 sticks cold butter, cut into bits, plus 1/2 stick melted butter
  10. 1 cup cold shortening
  11. 3 cups buttermilk

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Stir together the flour, powdered milk, baking powder, sugar, salt, pepper, cream of tartar and sage in a medium bowl.
  3. Using a pastry cutter, cut the cold butter and shortening into the dry mixture until blended thoroughly.
  4. Stir in the buttermilk so the dough comes together.
  5. On a lightly floured surface, turn out the dough and use hands to press into a circle 1 to 1 1/2 inches thick.
  6. Cut out the circles with a biscuit cutter or glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter.
  7. Bake until golden brown, 10 to 12 minutes.

Just cut all measurements in half.. i.e., if it calls for 1 tblsp use 1/2 tblsp; 2 sticks butter use1 stick etc.

Video recipe is right on, I am not a big sage person and you can taste lots of sage but overall it was good !

I’m eager to try this recipe but, the video and the written recipe are not even CLOSE to each other! Which ingredients are correct, the video or the written recipe?

The recipe is wrong, Food Network messed it up.  If you watch the video she makes 16 biscuits using 6 cups of flour.  Except for the flour all the ingredients have been halved, so it should either be changed to 3 cups of flour for 8 biscuits or all the other ingredients need to be doubled.  Sloppy work by Food Network.  Interestingly, the ingredients list on the ITK app are correct, they’ve all been halved.

These biscuits are very good. I followed the recipe exactly, and they were a bit peppery and tart. If I make them again, I think I will slightly reduce the black pepper and cream of tartar.

The BEST biscuit recipe I have ever made! This one is a family favorite! I followed the recipe almost exactly with no issues. The only minor change I made was the amount of butter it called for to be melted and brushed on top of the biscuits. I used much less and it was plenty for our tastes. For those calling out the typo regarding the sage; just use dried, ground sage found in the spice aisle. That’s what was meant. This recipe is great made without the sage and pepper as well if you aren’t in the mood for those flavors.

I am a little afraid to try this one. There still seems to be mistakes in this recipe that I quickly looked over. “1 teaspoon ground sage, finely chopped”. Ground herbs don’t need chopping.
