Black garlic has been used for a very long time. This fermented garlic is just regular garlic. It is really sweet yet also soft and flavorful. Black garlic may be used in both sweet and savory dishes, is bursting with antioxidants, and is incredibly tasty on its own.

Ingredients
- 10 cloves solo garlic (single clove garlic)
Instructions
- Place a rice cooker in your garage or on an outside porch if possible; the garlic will release a very strong odor as it cooks.
- Place garlic in the rice cooker. Cover and cook on the Keep Warm setting for 2 weeks, without opening the lid.
- After 2 weeks, check garlic. It should be soft, fermented, and black in color. If not, continue to cook on the same setting, checking weekly, 1 to 4 more weeks.
- You can use regular garlic cloves if you can’t find single clove garlic.
