a New Year’s Eve family custom in Kansas. Black-eyed peas are thought by southern households to bring luck in the next year. This easy-to-make recipe is delicious, and my family eats it with warm cornbread.

Ingredients

  1. 2 tablespoons vegetable oil
  2. 1 cup chopped cooked ham
  3. 1 cup finely chopped onion
  4. ½ teaspoon hot sauce
  5. 2 (15 ounce) cans black-eyed peas, undrained
  6. 1 ½ cups cooked rice
  7. ½ teaspoon salt

Instructions

  1. Heat oil in a large skillet over medium heat. Add ham, onion, and hot sauce. Cook until onions are tender, about 3 minutes.
  2. Add undrained peas, rice, and salt. Reduce heat to medium-low, cover, and cook until heated throughout, about 5 minutes.

Super simple and full of flavor. It did need more hot sauce than the recipe called for in my opinion but that is a to each their own thing. This recipe is very affordable and perfect for those on a tight budget.
