The fish with ginger-teriyaki glaze looks elegant but is quite easy to make. It is the ideal dish for hectic weeknights due to its small ingredient list and simple, 3-step preparation technique. Serve alongside your preferred vegetables or sides.

Ingredients

  1. 2 fresh peaches, finely chopped
  2. 1 red bell pepper, finely chopped
  3. ¼ red onion, finely diced
  4. 1 jalapeno pepper, seeded and diced
  5. 1 (15.5 ounce) can black beans, rinsed and drained
  6. ½ cup finely chopped fresh cilantro
  7. ½ teaspoon ground cumin
  8. sea salt to taste
  9. 1 avocado – peeled, pitted, and chopped
  10. 2 tablespoons lime juice
  11. 2 teaspoons extra-virgin olive oil

Instructions

  1. Mix peaches, red bell pepper, onion, and jalapeno pepper together in a bowl; gently fold in black beans and cilantro. Season with cumin and sea salt. Fold in avocado and drizzle salad with lime juice and olive oil. Let stand for 5 to 10 minutes before serving.

Made it twice already. Left out the jalapeno peppers and had to substitute dried cilantro for fresh. Served over a bed of spring mix greens. Tortilla chips also paired well with this. My three-year-old enjoyed it, too.

I really was looking forward to loving this dish but unfortunately no one at our dinner get together enjoyed it. I think this dish has a lot of potential, in fact everything went really well right up until the avocado was added. All of the flavors work very well together until the avocado changes the texture of the salad and then it’s just not good at all. I think the previous reviewer’s garlic suggestion is a good one. In the future I would definitely leave out the avocado- with a few changes this would be great over chicken, with chips, or even spooned over the top of sliced avocado. As is, it unfortunately wasn’t good.

I added garlic and ginger. The avocado and peaches tone down the heat of the jalapeno. This is a great summer salad!
