I think this salsa is the best for summer. It tastes fresh and is vibrant. Therefore, invite some buddies over as it makes a lot. After juicing the lime, I like to dab some lime juice over the bowl I’ll be serving the salsa in. In order to prevent the avocados from going stale, I also rub lime juice over the plastic wrap. Recall to include the tortilla chips!

Ingredients
- 1 (15 ounce) can black beans (such as Bush’s®), rinsed and drained
- 1 (11 ounce) can whole kernel sweet corn, drained
- 4 roma (plum) tomatoes, seeded and chopped
- 1 small red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- ⅓ cup chopped fresh cilantro
- ¼ cup diced red onion
- ¼ cup fresh lime juice
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 2 avocados, diced
Instructions
- Mix black beans, corn, tomatoes, red bell pepper, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl; fold avocado into the mixture. Cover bowl with plastic wrap, putting it right on top of salsa; chill at least 2 hours.

Big hit for taco night! The only thing I did different was use apple cider vinegar instead of red wine vinegar, cause that’s what I had on hand. Everyone loved it.

Husband did the grocery shopping and forgot the red bell pepper so I substituted with cucumber. He also unknowingly bought a red chili pepper instead of a jalapeno. All worked out. He loves his salsa and loved this recipe!
Wonderful summer salad/salsa. Love that the lime juice keeps the avocados green! I once had a version made with black eyed peas called Cowboy caviar, but I lost the recipe. This is every bit as good, and the black, red, green and yellow colors look great together.
Made with scallions instead of red onions. Equally as good.
I’ve made this several times for get togethers and it is always a hit. The only change is cutting back on cilantro because of friends that aren’t fans. This one is definitely a keeper!
I’ve been making this recipe for years and love it. We eat it as a side dish. Recipe is very forgiving if you prefer more or less of an ingredient. I go easy on the cilantro. This website sucks with all the ads!

Absolutely fantastic combination of fresh flavors. I used apple cider vinegar and also added some heat with a few shakes of bottled hot sauce. I could literally eat this with a spoon straight from the bowl. Takes a lot of time to cut up all those veggies, but totally worth it. Thanks for a great recipe!
Excellent! The only thing that I did differently, was instead of red pepper(I had no peppers), was to chop a cucumber up instead.

Absolutely delicious! The only thing I did differently is that I bought fresh corn and roasted the ears on the grill. A little bit of overkill probably, but it was really good. Highly recommended recipe!
Wonderful! I didn’t have peppers so I made this without and still it turned out great. I would recommend not omitting the red wine vinegar. It really adds to the flavor.

I made this for a ladies night get together. They loved it. I didn’t use avocado in it because mine had become to ripe to use. So I left it out and it was still delicious. My red onion after chopped turned out to be a 1/2 cup instead of 1/4 but I love red onion so it worked for me. I also added a 1/4 tsp of garlic powder to the dressing. Amazing.
