Ingredients
- 1 cup canned black beans, drained and rinsed
- 1 cup diced peeled ripe peaches
- 2 tablespoons minced red onion
- 1 tablespoon minced fresh cilantro
- 1 jalapeno, minced, with seeds
- 1 clove garlic, minced
- Kosher salt and freshly ground black pepper
- Tortilla chips, for serving, optional
Instructions
- Combine the beans, peaches, onion, cilantro, jalapeno and garlic in a medium bowl. Season with salt and pepper to taste. Serve with tortilla chips or spooned over grilled chicken or fish.
