Big Ray’s Mediterranean Salad Dressing

My kids always ask for s’mores when we are not camping, even though we go camping frequently. A simple, incredibly rapid, and portion-controlled method for preparing s’mores.

Ingredients

  1. 1 ½ cups olive oil
  2. ½ cup red wine vinegar
  3. 2 tablespoons red wine vinegar
  4. ⅓ cup Parmesan cheese, or to taste (Optional)
  5. 1 ½ tablespoons Dijon mustard
  6. 1 ½ tablespoons dried oregano
  7. 1 ½ tablespoons dried basil
  8. 1 tablespoon granulated onion
  9. 1 tablespoon minced garlic, or to taste
  10. 2 teaspoons salt
  11. 1 teaspoon white sugar
  12. ½ teaspoon ground black pepper, or more to taste (Optional)

Instructions

  1. Pour olive oil, 1/2 cup plus 2 tablespoons vinegar, Parmesan cheese, mustard, oregano, basil, onion, garlic, salt, sugar, and black pepper into a large glass jar. Whisk or stir with a spoon until well combined.
  2. Refrigerate dressing for at least 2 hours. Shake very well before serving.
  3. You can also blend this dressing in a processor or a blender.

Made as written except I used 3 tablespoons of Italian seasoning that has both oregano and basil in it instead of the 3 tablespoons of oregano/basil only. Both of those herbs go a long way with us so I didn’t want to risk them being overbearing. This turned out really flavorful. I really liked the flavor the parm added but it was pretty much impossible to keep it from sinking to the bottom within seconds of shaking. It adds good flavor though and I think you should include it. This one would be good to keep on hand and it is super simple to make. Thanks for sharing!
