Ingredients

  1. 1 cup all-purpose flour
  2. 1 cup cornmeal
  3. 1 tablespoon baking powder
  4. 1 tablespoon kosher salt
  5. 1/2 teaspoon cayenne pepper
  6. 1 (12-ounce) bottle amber beer
  7. 4 (6-ounce) catfish fillets
  8. 1 tablespoon salt
  9. 1 tablespoon cracked black pepper
  10. 2 tablespoons granulated garlic
  11. 1 lemon, juiced

Instructions

  1. Preheat a deep-fryer to 350 degrees F.
  2. In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine. Whisk in the beer, being sure to remove any lumps.
  3. Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces. In a small bowl add the salt, pepper and granulated garlic. Season the fillets with some of the salt mixture. Reserve the remaining salt mixture for another use.
  4. Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don’t stick. Fry until brown and crispy, about 3 to 4 minutes. Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

This is the best recipe for catfish. Thank You for sharing.  Of course as a chef, I changed a few things to it.  I halved the salt and replaced with Old Bay, and the beer to a light beer for the preferred flavor and color.  Thanks again!!!

Made this tonight for me and my husband and we both loved it. I always buy catfish nuggets because they’re so much cheaper than the fillets, so I did the nuggets up. My husband isn’t real fond of breaded fish, meat, chicken, etc, but I decided to do them because I love them! I used Ballantine Ale because that’s what he drinks and it was in the fridge. I deep fried them and had no problem with the batter sliding off. I patted the nuggets dry and I also let the batter sit for awhile just like you would for hush puppies. The batter was so light and tasty and not greasy at all. I’ll definitely use this recipe again. Thanks Aaron. I wish you were still on air because I do miss your show!

I think it’s a good recipe if you read it you’ll make it right. Salt needs to be regulated to your preference, make sure you dont add all of it because your not supposed to, read the entire recipe not just the ingredients or you’ll over do it. If you dont like salty or sensitive to the salt flavor reduce the salt by half and font use table salt.

I have read a lot of reviews saying there is way too much salt in this recipe. If you actually read his directions he says season the fillets with some of the mixture and reserve the rest for another use. It does not say use all of that salt mixture. I always look at a recipe as a rough guideline and season to my own taste regardless of what the recipe says.
