Big Batch Copycat Seasoned Breading

This traditional candy foam recipe is light and airy, thus the name “sea foam.”

Ingredients

  1. ¾ cup ground black pepper
  2. ¾ cup ground white pepper
  3. ½ cup ground paprika
  4. ¼ cup monosodium glutamate (MSG)
  5. 5 pounds all-purpose flour
  6. 1 ½ cups chicken seasoning blend
  7. 1 ½ cups nonfat powdered milk
  8. ½ cup powdered sugar
  9. 6 tablespoons baking powder
  10. 2 tablespoons salt
  11. 2 cups shortening

Instructions

  1. Mix black pepper, white pepper, paprika, and MSG for seasoning mix until well combined. Measure out 1 1/2 cups for breading. Store remaining mixture in an airtight container for another use.
  2. Combine flour, chicken seasoning, powdered milk, powdered sugar, baking powder, and salt in a large bowl. Mix in 1 1/2 cups seasoning mix. Cut in shortening with 2 knives or a pastry blender until evenly distributed.

  4. You can use seasoned salt instead of traditional salt.
