Ingredients
- 1 cup orange juice with lots of pulp, or more as needed
- 3 ripe, sweet apples, such as Red Delicious
- One 8-ounce can crushed pineapple
- 1/2 cup frozen grated coconut, thawed
- 1/4 cup sugar
Instructions
- Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like. Really fantastic. I just made it tonight to eat for tomorrow mornings breakfast. And after tasting it, it was hard trying not to eat the whole bowl! I did add the sugar because my fiance is also going to be eating it and is extremely picky, but in my opinion I think it would be fine without. I used flaked coconut I had as well as fresh pineapple. I added craisins and almonds and it is just so delicious.
Was very good. Doesn’t need the sugar. Added almond slivers for crunch. Loved it. Can sub orange juice for orange zest and juice from the orange also. Great flavor

Absolutely amazing! Used the same amount of orange juice and apples. But changed the rest up by using a 20 oz can of crushed pineapple in 100% juice and almost a whole bag of flaked coconut. It was very sweet and yummy and didn’t need any extra sugar at all. I will definitely be making this again!
This was superb!!! I added a banana and 1 packet of monk fruit in the raw instead of the sugar and it was good but not to sweet. Will make this again!!!
Super easy, super refreshing and super delicious! I used pink lady apples and sweetened coconut so I didn’t add any sugar. I didn’t have any orange juice so instead I added lime mango juice that I had on hand. It tasted very tropical and oh so yummy. I will definitely make this again.
This was a quick and refreshing dish to make. It was so flavorful and my guests loved it and asked for the recipe. It’s a nice change of pace from the usual fruit salad dishes. I will definately be making this again! :
This is one way to get kids to eat more fresh fruit. I manage an elementary school cafeteria and I’m always looking for healthy recipes to try out on our students. After watching the segment I knew I was going to try it. Sure enough the kids LOVED it. I didn’t even need to add the extra sugar, and I did add some chopped marachino cherries for additional color. Thanks Trisha for another healthy option to serve our kids.
