Both my hubby and I enjoy a spicy chili! However, I must adjust my recipes to suit the tastes of the three young children I’m feeding. In order to make up for the heat that is absent, we like to add a few dashes of Sriracha® or freshly chopped jalapeno and onion. Goldfish crackers on top are a favorite among children! But as with any chili, you are welcome to garnish it anyway you choose. The salsiccia is the greatest, in our opinion, if you’re fortunate enough to live close to an Italian market. Alternatively, you might use another type of ground Italian sausage. Despite the lack of spiciness, it is flavorful!

Ingredients

  1. 1 tablespoon vegetable oil
  2. ½ onion, chopped
  3. 1 ¼ cups uncooked instant rice
  4. 1 (14.5 ounce) can diced tomatoes
  5. ½ cup chopped fresh cilantro
  6. 1 cup chicken broth

Instructions

  1. Heat the oil in a skillet over medium-high heat, and cook and stir the chopped onion until browned, about 8 minutes.
  2. Stir in the rice, tomatoes, cilantro, and chicken broth, and bring to a boil. Reduce the heat to medium-low, and simmer until the rice is cooked and most of the liquid is absorbed, about 10 minutes.

It tastes great, but if you double the recipe, and use regular long grain rice, expect it to take a LOT longer, and use about twice as much liquid as the recipe calls for. Still is a great recipe!

Super easy to make. Not really authentic but it doesn’t claim to be. I added a little bit of crushed garlic with the onion and some southwest mixed veggies at the end to serve as a side for fajita night. Everyone at my table enjoyed this recipe and I will be making it again.

I made this because it was the only one I searched that contained the ingredients I had on hand, with the only exception being that I used cauliflower rice instead of regular. I made a single serving size as opposed to the 4 servings, and made my husband one of the boxed spanish rice with real rice. I let him try both and he liked the cauliflower one better. I followed the directions exactly, even the full amount of water and you wouldn’t be able to tell the difference. Tasted fresh and wonderful.

Very tasty and it went perfect with the firecracker mexican casserole. However I used vegtable broth and regular jasamine rice. So I increased the vegtable broth. I don’t really like chicken.

This is tasty! I’ve made one other version, and so far this is my favorite. Not too much going on, but just enough flavor. I think I should have cooked it a little bit longer, because the rice was a little bit undercooked. Other than that it was great!

It was easy to make. I followed another reviewer’s idea of using tomato paste with equal amount of water. I added some beef boullion, cumin, chili and garlic. I forgot to add the cilantro but added can of green chili and a can of drained corn. We enjoyed it and happy it was easy to make!

It was fantastic! I did 2 bags of boil in bag rice with 15 oz chicken broth, 1 can of drained corn and topped with Mozzarella Cheese. My husband loves rice, but my kids and I don’t usually care for it. Both of my children asked for seconds, my husband said it was the best ever, and I actually enjoyed it!

Pretty good but not spicey enough for my husband. I added a can of green chilis to spice it up a bit and followed the directions for cumin, etc. It was okay.
