The quickest and tastiest way to spruce up chicken breasts for a quick dinner is with this Parmesan-crusted chicken with mayo. Simply bake them with mayonnaise on top, Parmesan cheese, and bread crumbs on top. Dinner will be ready in no more than 30 minutes!

Ingredients

  1. 3 large eggs
  2. 2 cups white sugar
  3. 1 cup vegetable oil
  4. 2 cups grated zucchini
  5. 2 teaspoons vanilla extract
  6. 3 cups all-purpose flour
  7. ½ cup chopped walnuts
  8. 1 tablespoon ground cinnamon
  9. 1 teaspoon salt
  10. 1 teaspoon baking soda
  11. ¼ teaspoon baking powder

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8×4-inch loaf pans.
  2. Beat eggs in a large bowl until light and frothy. Add sugar and oil; mix until well combined. Stir in zucchini and vanilla. Combine flour, nuts, cinnamon, salt, baking soda, and baking powder; stir into egg mixture until incorporated. Divide batter into the prepared pans.
  3. Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 60 to 70 minutes.

This is my favorite recipe. I take it to the next level by doubling the cinnamon and then I add sprinkled brown sugar to the top after I add it to the loaf pan before baking. It makes the slices have a sweet crystalized topping which is so good!

Oh, wow! Okay… Not to be a Karen who tweaks and subs and then give a 4. I’m. Totally. A. five! I didn’t even have most of these in hand but your video inspired me to use others. Instead of Cresent I had Grand so and split them and spread. I didn’t have graham but I did have a sleeve of those awesome Delta airline ginger cookies from Kroger and smashed em up. I had a can of apple pie filling. Did everything to your directions and so happy. Thank you thank you for this awesome recipe. I’d never have thought to do it like you did. My family is happy! Wonderful recipe. Over the few times I made this, I prefer only one tsp of cinnamon, brown sugar + honey to give it a darker color, finely grate the zucchini (grown in my garden!), and sprinkle about a tsp of turbadino coarse sugar on top of each loaf to give it a little crunch.

I tried this recipe, and loved it. I used 1/2 cup applesauce and 1/2 cup oil. I also used 2 teaspoons of cinnamon because we like it. I also added 1/2 teaspoon of allspice. It was delish.
