When I had pancakes for dinner and needed a fruit to complement the pancakes and sausage, I came up with this dish. I just had pineapple, thus this happened. I had everything I needed in my cabinet to prepare this.
Prep Time: | 30 mins |
Cook Time: | 15 mins |
Total Time: | 45 mins |
Servings: | 60 |
Yield: | 5 dozen cookies |
Ingredients
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 cup very finely chopped pecans
- ¼ teaspoon salt
- ⅓ cup powdered sugar, or more as needed
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Beat butter, 1/2 cup powdered sugar, and vanilla with an electric mixer in a large bowl until smooth. Gradually mix in flour, pecans, and salt until completely incorporated. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
- Bake in the preheated oven until bottoms are light golden brown but tops are still pale, 12 to 15 minutes. (Try not to let cookies get too brown: it’s better to undercook them than to overcook them.)
- Remove cookies from the oven and let sit on the baking sheets briefly before removing to wire racks.
- Place 1/3 cup powdered sugar in a shallow bowl; roll hot cookies in sugar to coat, then return to the wire racks to cool. Once cooled, roll cookies in the powdered sugar once more.

Same recipe as my mother-in-law’s cookies, I’ve been making them for years now. There delicious! *****
For the most part the cookies came out OK…a little fragile and crumbly but the flavor and texture was superb! Quick and easy to make. I stored half a dozen cookie balls in the freezer for future unexpected company. Cheers!
Delicious. They key is to make small balls. Time consuming to roll smaller ones but do it and you’ll have delicious, not dry snowballs!!
These Snowball Cookies were delicious and tasted identical to my mom’s that she used to bake during the holidays. They are so simple to put together, but won’t last long. So, double the recipe. I will be making these cookies again throughout the year!
Just like my mom and grandmother used to make. Perfect
Excellent! Absolutely delicious. Did not change a thing.
Absolutely wonderful as is and super easy to make. My two-year old daughter and I had a lovely time making these delectable cookies.
Easy to make and they are delicious
Flavor is good. Lots of pecan flavor which is what I expected. 12 minutes was definitely long enough bake time. I made them walnut sized and they are too big. Too big for rolling in the powdered sugar without the cookies wanting to fall apart. So I went ahead and sifted the powdered sugar on them for both coatings. And, making them walnut sized in no way could have made 60 cookies. I got barely 3 dozen. Maybe we have big walnuts where we are. LOL
Keep them small. Larger ones break apart easily.
Sorry! These cookies are bland, dry and hard to swallow! I’ve been making these for years, unfortunately I lost my recipe.. But these, these are not them! Never again
Easy and delicious cookies! A favorite all year round and especially at the holidays!
This cookie brings back memories of Christmas long ago. A delicate, buttery cookie that isn’t chocolate, it provides perfect variety for a cookie tray. I followed directions except for cooking them about 17 minutes.
Used to buy these every year but the store discontinued carrying them I will enjoy having them around again.
I love these homemade from the heart Goodies! Brings back memories about my Grandma and the many made from scratch goodies , made with Love canned goods, fried pies, homemade tamales, Christmas candies and cookies ! Nostalgia in the air .
Came out great, the office crew devoured them. Toasted the pecans for great flavor.
I made these for the first time today. They are very good. So easy to make in a short time. It only yielded 30 cookies so I made another batch. Non-dairy is necessary for me so I had to use margarine. I thought they turned out great and my husband agreed. I will definitely be making these again and adding them to the variety I bake for Christmas.
The best !!! For Christmas I put a red or green m and m in them after they come out of the oven .
These were so easy to make and they taste just like my mom’s growing up. I’m so happy I found this receipe. These will now be included in my Christmas cookie list.
I make these as per the recipe but add an extra goody, chocolate kisses! Wrap dough around the kiss and bake as usual. Delicious!
This cookie has several names but whatever you call it, it’s delicious. This is my daughter’s favorite cookie and never lasts long in this house. It has a delicate, buttery flavor and will be the perfect addition to your Christmas cookie platter. I roll the cookies in the confectioner’s sugar once, and then I place the confectioner’s sugar in a sieve and sprinkle over the cookies for an even and complete coating.
