Ingredients

  1. ½ pound bulk spicy pork sausage
  2. ½ pound ground beef
  3. 1 onion, diced
  4. 1 (2 pound) loaf processed cheese food (such as Velveeta®), cubed
  5. 1 (28 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  6. 1 (10.5 ounce) can condensed cream of mushroom soup

Instructions

  1. Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add onion. Cook and stir until the meat is evenly browned, and no longer pink, about 10 minutes; drain and discard any excess grease. Transfer meat mixture into a slow cooker.
  2. Layer cheese food cubes atop meat mixture.
  3. Blend diced tomatoes with green chile peppers in a blender until smooth; pour over cheese cubes along with condensed soup. Stir well and cover.
  4. Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

This was great, and so easy! It’s probably going to be my go-to queso recipe now. I like how it doesn’t get overly thick as it cools down (unlike other slow cooker queso dips like this). The consistency stayed great through several hours of a party.

Don’t use cream of mushroom. Instead melt 8 oz cream cheese into the dip. Add some Slap Ya Mama, garlic powder, Childress seasoning. YUM!!!!

I’ve had many of Rotel dips in my time of food days at work but this one stands out for a couple of different reasons. I like the addition of meat but half beef half sausage was excellent. Now for the genius part. Blending the Rotel! Genius I tell you. Not only is it easier on the eyes, the flavor is more dispersed. LOVED IT! If you are sensitive to heat I do recommend using regular sausage instead of spicy because the sausage and Rotel did pack a punch. Regardless of what sausage you choose, this is excellent and the best Rotel dip I have had.

Used Johsonville Sausage and italian diced tomatoes in this and it was a nice change. Quick and easy but nothing super duper special. Veganizable with vegan sausage and vegan cheese and cream of mushroom soup 🙂
