Best BLT Chicken Panini

Combining a chicken panini with a standard BLT will transform it into a gourmet sandwich. Use stale bread, roasted chicken from the deli that has been finely sliced, and other BLT staples. This quick and simple sandwich will be a hit with the whole family.

Ingredients

  1. 4 slices bacon
  2. 1 tablespoon mayonnaise
  3. 4 slices ciabatta bread
  4. 8 ounces deli-sliced roasted chicken
  5. 2 slices Swiss cheese
  6. 2 leaves lettuce
  7. 4 slices tomato, or to taste
  8. cooking spray

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 6 to 8minutes. Drain bacon slices on paper towels.
  2. Spread mayonnaise on one side of the 4 slices of bread. Layer chicken slices, Swiss cheese, lettuce, tomato, and bacon, in that order, over 2 slices of bread. Place the remaining 2 bread slices on the top, mayonnaise side down.
  3. Heat a panini press over medium-high heat and coat with cooking spray. Place sandwiches inside. Cook until heated through and the cheese starts to melt, 5 to 7 minutes.
  4. Cut panini in half and serve immediately.
  5. Good bread choices for a panini include ciabatta bread, ciabatta rolls, focaccia, sourdough, thick Italian bread, and Texas toast, to name a few.
  6. Depending on the size of the panini press or pan, and the size of the bread, you might need to heat the sandwiches one at a time.
  7. If you’re using a panini pan, brown the first side for about 4 minutes and then flip the sandwich allowing the second side to turn golden brown, about 3 minutes more.

I just purchased a 6-in-1 griddle and this was the first thing I made on it. This panini was absolutely amazing! I used ciabatta buns, and followed the layering exactly. The second time I made it, I added some sliced pepperoncinis to add some extra zip. It’s five stars as is and the options and additions are endless.
