Berry Custard Pie

Ingredients

  1. 3 eggs
  2. 1/2 cup sugar
  3. Pinch salt
  4. 1 1/2 cups milk
  5. 2 teaspoons vanilla extract
  6. 1/2 cup blueberries
  7. 1/2 cup raspberries
  8. 1 (9-inch) graham cracker crust

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl beat together the egg, sugar and salt until the mixture becomes pale. Slowly beat in the milk and vanilla.
  3. Cover bottom of the pie crust with the berries. Pour the egg mixture over the top, bake until center is set, about 40 to 45 minutes. Remove from oven and cool to room temperature before serving.

It did not come out well. The graham cracker crust somehow got absorbed by the custard filling and it was mostly brown in the end. The consistency was also unappealing.

9.21.19:   1. Did a combo of this recipe, Amish Baked Custard & substituton for 2% milk. 2. Used a little less than 1/2 C sugar and thought it was too sweet. Try 1/4 next time.

3. Used 1 1/2 C non fat milk – 3T salted butter for 2% milk (put 3T melted butter into glass measuring cup and added enough milk to bring it up to 1 1/2 C
4. Used 2T vanilla. Think that was too much. Use 1 1/2T next time.
5. Didn’t use blueberries, raspberries or graham cracker crust. Used  white ramekins and 1 glass pyrex ramekin.
6. The surface was bumpy but the texture was soft. Thank you God!
7. Tried with cold cocoa, then with Tart Cherry Juice 365 (Whole Foods) Juice was best. Try next time with cranberries, natal plums, other tart fruit, gooseberries?

This was soooo good and very easy!  I followed the recipe as written.  I had to bake it about 10 minutes longer than the time given, but that wasn’t a problem.  This was just fabulous!
