Beignets

Ingredients

  1. 1 package dry yeast
  2. 1/2 cup warm water
  3. 1/2 cup evaporated milk
  4. 1 egg beaten
  5. 1 teaspoon vanilla
  6. 2 tablespoons melted butter
  7. 1/4 cup sugar
  8. 1 teaspoon salt
  9. 3 cups all-purpose flour
  10. 3 to 4 cups peanuts oil for deep frying
  11. Confectioners sugar, for garnish
  12. Cinnamon sugar, for garnish

Instructions

  1. In a bowl of a kitchen aid mixer dissolve yeast in warm water. Add the milk and next 5 ingredients. Then beat in flour, 1 cup at a time, on medium-high speed for 1 minute. Dough will be sticky. Work 1/4 of the dough at a time. Place on a well-floured board and roll dough to about 1/8 inch thick. Cut dough into 2 inch squares (irregular shapes are OK). Preheat oil to 370 degrees. Fry squares in oil, just a few at a time. When they rise to the surface, flip and cook until golden brown. Drain on paper towels. Dust with powdered sugar, or cinnamon sugar. Serve warm.

Loved the beignets. I used 2% instead, and they still tasted yummy. They were so light and fluffy. I think letting the yeast work twice definitely helped in creating the fluffy structure.

This recipe is the closest I have found to the beignets that are at the Cafe du Monde in the French Quarter. Light, fluffy, and tasty.

So quick and so good!! My daughters have been asking for beignets ever since seeing the Princess and the Frog. Made these on Sunday morning and they were a big hit!! We drizzled honey over some of them instead of the powdered sugar. Made a huge batch, enough to share with our neighbors and take to Grandma! I used whole milk also with excellent results!
