Beef Nacho Casserole

Even the kids are sure to like this easy to prepare nacho dish that takes less than an hour. Under a layer of Colby cheese, layers of seasoned ground beef, corn, and tortilla chips are cooked.

Ingredients

  1. 1 pound ground beef
  2. 1 ½ cups chunky salsa
  3. 1 (10 ounce) can whole kernel corn, drained
  4. ¾ cup creamy salad dressing (such as Miracle Whip)
  5. 1 teaspoon chili powder
  6. 2 cups crushed tortilla chips
  7. 2 cups Colby cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Cook ground beef in a large skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Remove from the heat and drain.
  3. Stir salsa, corn, salad dressing, and chili powder into the skillet until well combined.
  4. Layer 1/2 of the ground beef mixture in an ungreased 2-quart casserole dish; top with 1/2 of the tortilla chips and 1/2 of the cheese. Repeat layers once more.
  5. Bake, uncovered, in the preheated oven, until heated through and cheese is melted, about 20 minutes.
  6. Monterey Jack can be used in place of the Colby cheese.

I used low fat meat, Atkins chips used full fat yogurt in place of mayo. Used less to make 1 serving I did use home made chunky salsa and Cheddar cheese. Much heathy.

I was given this recipe many years ago. Mine calls for a small container of plain yogurt instead of mayo. Less fat. Iv’e always topped it with chopped lettuce and tomato when out of the oven to get family their vege. Add a dollop of sour cream and yum.

I made this for my mother,and son and I. We had several servings. I made a small one just enough for me,my mom,and my son my daughter is a finicky eater. I followed the recipe almost exactly. My son,and daughter helped layer the chips. I decided to layer it also with chopped tomatoes fresh my daughter added extra cheese. We put together a thin layer of sour cream,and nacho cheese and more tomatoes,and we layered it on the meat,and nachos. I was a little skeptical about the mayo,but it turned out to be delicious more than delicious it was savory,gooey,and had the right amount of crunch to it. The meal was amazing. i should of took a picture of it,but it was gone in a little less than 25 minutes. there were no leftovers. Admittedly it was a small dish just for three. it was simple to make,and didn’t take long to cook . I would recommend this for superbowl parties,birthdays,block parties,and tailgate parties. It was simply the best.

If you like walking tacos this is a winner! I made this nearly to the recipe but, being budget conscious and trying to prevent waste, I used up an ear of roasted corn by adding it in with the canned mexican corn and I also split the salad dressing and some leftover sour cream about half and half. My son served his with a dollop of sour cream and a dash of hot sauce and I had mine with shredded lettace, sour cream and sliced black olives on top. It took very little prep and went together very easily [I have trouble layering stuff but the proportions were just right.] Definitely a keeper of a recipe.

Great base recipe. We like more heat so I might add some green chillies next time. Only change I made was too add black olives. May add black beans next time as well. Overall it was very tasty.

Good! Had some picky eater so substituted salsa for tomato sauce + taco seasoning and the mayo for sour cream. Would be good perhaps as a burrito filling as well

It was great. Used it with my own recipe and was great. Left out corn. Did for 12 servings. Browned the meat, onion and bell pepper. Drained grease. Combined salsa,sour cream instead of mayo,taco seasoning,can of regular diced tomatoes, can of cream of chicken, can of cream of mushroom, and cilantro with meat. Layered Doritos,meat mix,Fiesta blend mexican shredded cheese twice. Baked for 25 minutes. What’s great about this recipe is how you can add to it. Mine turned out delicious!! Thanks all recipes!

I made it tonight, but tweeked the recipe a bit…I didn’t use the seasonings listed & used my own combination. I also didn’t use mayo, but sour cream. My family liked the taste, but would have rather I used tortillas instead of tortilla chips. I liked the crunshiness, but they didn’t. It was tasty none the less! Thank you!

I made this recipe exactly as written and itw as very good. As others have written, I might add some sour cream instead of the yoghurt next time, but it was fine as written. If you like more spicy food — about half my family does — then I would add some cayennne or japaleno to the recipe.

This was an easy, tasty, and cheap recipe. My picky husband even liked it. I added chopped peppers, onions and garlic for more chunkiness. I also put a little more cheese on top. I think I will double the recipe when my kids come to visit.

This is a great recipe. My teenagers love it. It is one of the recipes i freeze and send to university with my kids. I have used miracle whip alone, sour cream alone but i prefer a mixture of both. Honestly you can use whichever you have on hand. Inexpensive, easy and delicious!

Flavorful but I thought it a bit dry. Next time I will use regular salsa for more moisture or half chunky and half regular. I followed others’ suggestions–black beans, diced chilies, Mexican cheese. My friends thought it was wonderful.
