Ingredients

  1. 1 tablespoon butter
  2. 2 slices lean bacon, chopped
  3. 1 small onion, finely chopped
  4. 1 pound chanterelle mushrooms, cut lengthwise
  5. salt and freshly ground black pepper to taste
  6. 2 tablespoons chopped fresh parsley, or to taste

Instructions

  1. Melt butter in a skillet over medium heat. Cook bacon and onion until onion is soft and translucent and bacon is crisp, about 5 minutes.
  2. Add chanterelle mushrooms and simmer in the skillet until liquid has completely boiled off, about 10 minutes. Sprinkle with parsley and serve immediately.
