Barb’s Broccoli-Cauliflower Salad

Ingredients

  1. 12 slices bacon
  2. 1 head cauliflower, chopped
  3. 1 head fresh broccoli, diced
  4. ¾ cup sunflower seeds
  5. ½ red onion, diced
  6. 1 cup creamy salad dressing
  7. 1 ½ tablespoons white wine vinegar
  8. ¼ cup white sugar

Instructions

  1. Gather all ingredients.

  3. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.

  5. Combine bacon, cauliflower, broccoli, sunflower seeds, and onion in a large bowl.

  7. Whisk salad dressing, sugar, and vinegar together until blended. Pour over cauliflower mixture and toss to coat. Refrigerate and allow to chill before serving.

Made this for a potluck tomorrow – looking for something on the side in the veggie family. Tastes great and looks great! Some changes I made include: I may have skimped just a tad on the sugar and I used chopped up pecans. Also did 8, not 12 bacon (low sodium) slices. I thought the amount of salad dressing was just right – no changes there.

This is so good it’s addictive. To the person who said there was way too much dressing, since the recipe doesn’t specify how much vegetables you’re supposed to use, they probably used way too little.

Oh mi GAWD! I mean, I’m sure I’ve had this in my life. It tastes so familiar. But tonight I did an ingredient search for bacon and cauliflower and came upon this and love how I don’t have to cook the broc or cauli, so the recipe keeps whatever nutrients. I used rice vinegar bc it was all I had. This is bomb and I will make it all the time now.

exactly what I make except I haven’t tried it with sunflower seeds (might have to try that). The dressing I make is ½ cup mayo, 2 tablespoons red wine vinegar, 1 teaspoon sugar & put the cheese in as you serve it so if you have left-overs the cheese doesn’t get slimy.

Delicious! Other similar recipes add shredded cheese and I had a block of blue cheese marble that I shredded and added about 3/4 cup. Nice complement to the bacon.

I switched the sugar with stevia but it was a little too sweet, so next time I’ll cut that amount in half. I roasted some slivered almonds and used those instead of sunflower nuts. Same effect as sunflower nuts, just as good.
