Ingredients

  1. 1 pound boneless pork chops, cut into strips
  2. 1 teaspoon ground cumin
  3. ½ teaspoon garlic pepper blend
  4. 1 tablespoon vegetable oil, or as needed
  5. ½ cup red onion slices
  6. ½ red bell pepper, cut into strips
  7. ½ green bell pepper, cut into strips
  8. ⅓ cup barbeque sauce
  9. 4 (8 inch) flour tortillas

Instructions

  1. Combine pork strips, cumin, and garlic pepper blend in a large resealable plastic bag. Shake until pork is coated.
  2. Heat vegetable oil in a large skillet over medium heat. Add pork; cook and stir until browned, 4 to 5 minutes. Add onion, red bell pepper, and green bell pepper; cook until fragrant, about 2 minutes. Stir in barbeque sauce; simmer until flavors combine, about 2 minutes.
  3. Serve pork mixture over flour tortillas.
  4. Substitute taco seasoning for the ground cumin if desired.

This was fast and easy and perfect for the weeknights when you don’t have much time. I chose to spoon the barbeque sauce over the individual fajitas out of personal preference but that is the only change I made. I think the pork could have used a bit more seasoning and definitely some salt but that is an easy fix.
