This chicken “doodle” soup recipe comes from my father. (One of his grands was known by the nickname “Doodle”). Although he has been gone for 21 years, this dish still tastes as amazing as it did when I was a child.

Ingredients

  1. ¼ cup butter
  2. 1 cup chopped onion
  3. 1 cup chopped celery
  4. 12 cups water
  5. 4 cups diced cooked chicken
  6. 1 cup diced carrots
  7. 3 tablespoons chicken bouillon granules
  8. ½ teaspoon dried marjoram leaves
  9. ½ teaspoon ground black pepper
  10. 1 bay leaf
  11. ½ (10 ounce) package egg noodles
  12. 1 tablespoon chopped fresh parsley

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add onion and celery; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add water, chicken, carrots, bouillon, marjoram, pepper and bay leaf and bring to a boil. Reduce heat and simmer until vegetables are tender, about 25 minutes. Remove bay leaf.
  2. Stir in egg noodles and parsley, increase heat, and bring to a boil. Reduce heat and simmer until noodles are tender, about 10 minutes.

This is excellent! I substituted chicken stock + bone broth for bouillon. It also needed a bit of salt. This is now my go to chicken soup recipe! So delicious and easy!

Very Good! I used chicken stock rather than water for the only change from this recipe. Was great flavor, served with garlic, cheese biscuits. Made last week and hubby wants to know when we’ll have it again. Soon!

This is a keeper! I’ve made other versions but this is the best. The only change I made was to use 12 cups of chicken broth completely omitting the bouillon cubes. I didn’t have any marjoram on hand so I sprinkled poultry seasoning in it’s place. I added more carrots but left the onion and celery as stated. My husband ate almost three bowls! Delicious! This will now be added to my recipe book and the other version will be taken out.
