Ingredients
- Mazola Pure® No-Stick Canola or Butter Flavored Cooking Spray
- 1 ¼ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons Argo® Baking Powder
- ¼ teaspoon salt
- 1 large egg
- ¾ cup mashed bananas
- ½ cup Mazola® Corn Oil
- ½ teaspoon Spice Islands® Pure Vanilla Extract
- ½ cup chopped walnuts
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8 1/2×4 1/2-inch loaf pan with cooking spray.
- Combine flour, sugar, baking powder, and salt in a medium mixing bowl. Whisk together egg, bananas, oil, and vanilla in another bowl. Add to flour mixture and stir until flour is moistened. Fold in walnuts.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until puffed and golden brown, 35 to 40 minutes. A wooden pick inserted in the center should come out clean.
- Transfer loaf pan to a rack to cool for 10 minutes before turning out of the pan. Serve warm or store in an air-tight container.
- Reserve 2 tablespoons of the walnuts and use to sprinkle on top before baking.

I substituted 1/2 of the oil for apple sauce. Really moist and oh so delicious. I should have doubled the recipe. It was gone in 5 minutes

Great recipe , I made it in a caste iron skillet. Unfortunately, it didn’t rise as much as I expected but other than that a great breakfast treat!
Very happy with the results although I did finesse it a little. I used 3 ripe bananas (about 1 1/4 cups) instead of the 3/4 cup given in the recipe. At the recommendation of another reviewer I added a 1/2 cup of brown sugar, 1/2 teaspoon of cinnamon and doubled the vanilla. Next time I think I’ll increase the nuts.
Very easy and a lot of fun to make. Hardly takes any time, and the finished bread was delicious. The cooking time was exactly right (I used a shallow 9×9 pan). I wanted just a “taste” but ended up having a whole slice, couldn’t stop myself.
I am not much of a baker, but this was pretty easy and pretty good. Alittle dry, but very good with coffee or milk. I added dried cranberries and and used apple sauce instead of oil and followed recipe as it is. I will make it again.

I substituted the eggs with unsweetened applesauce for a vegan. The recipe got rave reviews. For me it was a little too sweet. But, for a sweet tooth it is perfect.

Tastey, but you better eat it right away. Moist straight out of the oven but by the next day it was pretty dry.
