Ingredients

  1. cooking spray
  2. ½ cup white sugar
  3. ¼ cup unsalted butter
  4. 2 small ripe bananas, mashed
  5. 1 egg
  6. ½ teaspoon vanilla extract
  7. 1 cup all-purpose flour
  8. 1 teaspoon baking powder
  9. ¼ teaspoon baking soda
  10. ¼ teaspoon salt (Optional)
  11. 5 small strawberries, chopped

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  2. Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
  3. Sift flour, baking powder, baking soda, and salt over the banana mixture. Beat until just combined. Stir in chopped strawberries. Pour batter into the prepared muffin cups.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 16 to 18 minutes. Cool for 5 minutes then transfer to a wire rack to cool completely.
  5. You can substitute strawberries with 1/3 cup chopped raisins.
  6. This batter is enough to make 18 mini muffins.

didnt have strawberries so I used blueberries and rasberries a large handful and they came out great. more like 20-22 min cook time for my oven

I think they were okay totally user error I put way too many strawberries in these muffins, so they weren’t that great.

Delicious! I had frozen strawberries so i put them in my food processor, which made a paste instead of chopped strawberries. Not sure if it made a difference, but the banana butter and sugar i mixed together at the same time, instead of in stages. I’ll definitely make this again the next time i get some over ripened bananas.

Be sure to chop the strawberries into the smallest strawberry bits you can make. Large chunks of strawberries can make for soggy muffins.

banana flavour was a bit overpowering, might use slightly less next time. strawberry texture was okay, could be better. overall great!

These are fabulous and so easy!!! I used 2 medium/large bananas because that is what I had so ended up baking for 25 minutes instead of 18 to get them done but so worth the wait. My husband devoured them. Will definitely make again. Thanks for the great recipe!
