Banana Pudding with Graham Crackers

This gratin, which is ideal for the holidays, combines Swiss cheese and fresh spinach. The pain from squeezing frozen spinach is gone. This can be completed a day in advance to save time on the big day, with the exception of the breadcrumb topping. Only an additional 30 minutes will be needed for cooking.

Ingredients

  1. 3 ½ cups cold 2% milk
  2. 2 (3.5 ounce) packages instant French vanilla pudding mix
  3. 1 (1.3 ounce) envelope dry whipped topping mix (such as Dream Whip®)
  4. ½ (14.4 ounce) package graham crackers, or more as needed
  5. 2 large bananas, sliced, or more to taste

Instructions

  1. Pour milk, pudding mix, and whipped topping mix into a large bowl; mix with an electric whisk or hand whisk until ingredients are combined and a thick pudding forms.
  2. Break graham cracker sheets in half to form squares.
  3. Cover the bottom of an 8-inch square baking pan with 9 graham cracker squares. Layer 1/2 of the banana slices on top in even rows and cover with 1/2 of the pudding mixture, using a spatula to spread it evenly. Repeat layers once more. Sprinkle top with graham cracker crumbs, if desired.
  4. Cover and refrigerate until fully chilled, 4 hours or longer. Cut into 9 squares to serve.
  5. You could also top this with a layer of Cool Whip; I omitted it due to my fiance’s preferences.

This turned out pretty well. I haven’t had banana pudding in years, and as I recall, it was always with vanilla wafers. The graham crackers worked equally well as a replacement. I’d never used Dream Whip before, but it certainly thickened the pudding nicely. I scaled the recipe in half and weighed the Dream Whip (used .67 oz) and 7 oz of graham crackers. Very quick-and-easy recipe, as well.
