Ingredients

  1. 1 (18.25 ounce) package yellow cake mix
  2. 1 (3.5 ounce) package instant banana pudding mix
  3. 4 eggs
  4. 1 cup water
  5. ¼ cup vegetable oil
  6. ¾ cup mashed bananas
  7. 2 cups confectioners’ sugar
  8. 2 tablespoons milk
  9. 1 dash vanilla extract
  10. ½ cup chopped walnuts (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  2. In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in eggs, water, oil and mashed banana. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  3. Bake in a preheated oven for 50 to 55 minutes, or until cake tests done. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To make glaze: In a small bowl, combine confectioners’ sugar, milk and vanilla. Whisk until smooth and of a drizzling consistency. When cake is cooled, drizzle icing over cake with a zigzag motion. Sprinkle chopped nuts over wet icing if desired.

Instead of 1 cup water, used 1/2 cup water and 1/2 cup spiced rum, doesn’t taste like rum, just spiced banana cake. See pic as well… yummy.

Delicious! I used Banana cake mix (why wouldn’t you?!) For the icing, I mixed 4oz. cream cheese; 1 C. confectioners sugar; 1/2 tsp. vanilla; 1/2 tsp. cinnamon; 1/2 tsp. lime juice; 1/4 tsp. lemon juice; 1 T. milk. I added the lime & lemon juices to cut down on the sweetness. I continued to add the milk by tablespoons until I reached the consistency I wanted. It came out extremely moist after only requiring 40 minutes of baking! Also, I sprayed my Bundt pan with cooking spray, DID NOT flour, and it came out with no problems as far as sticking!

Great recipe! The only thing I changed was… I put the walnuts in the cake mix and not on top. I cooked exactly for 50 mins and it came out perfectly.

Used GF yellow cake mix, French vanilla pudding mix (because it’s what I had), 2 super ripe bananas, 1/3 cup mini-M&Ms and 1/2 cup of chopped pecans. Baked in a bundt pan The M&Ms made the color fun (think tie-dye) and added a little extra “special” to the cake. Served with a dollop of whipped cream.

This is easy to make, a good way to use up tired, dark bananas . Does remind me a lot of banana bread in a tube shape, but my guests really seemed to like it.

I pretty much made this cake as directed with a couple of changes. They were out of banana pudding at the store, so I used vanilla. Also I used 2 whole bananas, I wanted to be sure the banana was a strong enough flavor since I had to use vanilla pudding. I made it in a 9×13 pan and iced it with cream cheese frosting. It was a hit!! Everyone loved it. It was easy and quick to make. I can’t wait until i need another cake!

I’ve made this many times over the years. I use 3 very ripe bananas. This time it’s a 1 layer 9 x 13 and will have chocolate frosting because that’s what my 34 year old son asked me to bake for his birthday. Family favorite for sure.
