Ingredients

  1. 1 cup 2 percent milk
  2. 1 cup plain unsweetened almond milk
  3. 3 tablespoons cornstarch
  4. Pinch of kosher salt
  5. 1/3 cup sugar
  6. 1 large egg
  7. 1 teaspoon vanilla extract
  8. 2 large bananas
  9. 6 low-fat cinnamon graham crackers, broken into 1-inch pieces
  10. 1 tablespoon cocoa powder (sweetened or unsweetened)
  11. 1/4 cup sliced almonds, toasted

Instructions

  1. Heat the milk and almond milk in a saucepan over medium heat until almost simmering; remove from the heat. Meanwhile, whisk the cornstarch, salt, sugar and egg in a medium heatproof bowl. Pour about half of the hot milk mixture into the bowl and whisk vigorously until smooth. Pour the mixture back into the saucepan and cook over medium heat, whisking vigorously, until thick and starting to bubble, 1 to 2 minutes. Whisk in the vanilla. Transfer the mixture to a bowl and let cool, stirring occasionally. Cut the bananas into thin slices. Layer a few banana slices, a few pieces of graham cracker and 2 tablespoons of the prepared pudding in each of 4 glasses; sprinkle with cocoa powder and almonds, then repeat to make 2 more layers. Cover with plastic wrap and chill 4 hours or overnight.

My pudding did not get thick during the stirring stage. Cant figure out why as I followed instructions. Very disappointing and a waste of my ingredients..

i don’t know what I did but the pudding came out very liquid. I thought it was going to become a pudding texture. Instead it was watery.

I think I may have overcooked the filling, but alone, it tasted delicious! When I ate it all together, it just tasted like banana mush.. I probably did something wrong.

I made this recipe for my family and they loved it. I changed it up just a bit. I added a little almond extract and cinnamon. I also used vanilla wafers instead of graham crackers. While it was a little warm I crushed up bananas and whisked them in. This is a keeper, it could be used as a pie filling as well. EASY and FAST!

For a low-fat recipe, this was fantastic. I skipped the cocoa powder and almonds, and my kids and husband really enjoyed it. A keeper, for sure!
