Banana Pancake Pops

This fruitcake recipe uses crushed vanilla wafer cookies, cherries, pecans, raisins, coconut, and is completely baked-free.

Ingredients

  1. 1 cup vegetable oil for frying, or as needed
  2. 1 ¾ cups pancake mix
  3. 1 cup water, or as needed
  4. 2 bananas, cut into 1/2-inch pieces
  5. ¼ cup white sugar
  6. ¼ cup ground cinnamon

Instructions

  1. Heat oil in a large saucepan to 350 degrees F (175 degrees C).
  2. Mix pancake mix and water together until batter is smooth. Dip each banana slice in the pancake batter until fully coated.
  3. Fry coated banana slices, 3 to 4 at a time, in the hot oil until lightly browned, about 1 minute per side; remove with a slotted spoon and transfer to a paper towel-lined plate. Sprinkle pancake pops with sugar and cinnamon.
  4. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount will vary depending on cooking time and temperature, ingredient density, and the specific type of oil used.

Extremely easy to make ! Yummy treat . I made some banana pudding , nilla cookies , drizzled with caramel , chocolate syrup and dusted it with powered sugar to make it an extra special treat for my kids 😛 . I omitted the cinniman and granulated sugar

Fun and easy made them with the help of my 3 year old. I used Kodiak brand pancake batter which is a little different consistency (may explain why they fell open) but made them high protein bites. Yummy.

Ooooh wow! These were easy & fun – the kids enjoyed shaking them in a bag of cinnamon sugar. Served with apple slices & “peanut butter apple dip” also on this site. Will absolutely make again. Great idea, thank you!!

I had pancake mix that I was never going to use so I made these. Such a great idea, and turned out perfect following the exact recipe. After using bananas there was leftover batter, so I experimented with frying other treats, like El Fudge cookies. By far the easiest way to make batter and delicious fried deserts or breakfast.

These were super easy to make and tasted great, very sweet though. Will have to say, there was a lot more batter then 2 bananas could utilize. It took over 4 really long bananas to use up most of the batter. I also think I didn’t cut these at 1/2 inch either. They were more like an inch thick. And to me, that was perfect size. And I used my deep fryer, which was simpler. Otherwise, these were so tasty and the bananas were extremely soft from the frying that I was popping them left and right into my mouth. I’m not one for baked or fried bananas unless it’s in bread but these were amazing. I didn’t play nice and had a hard time sharing 😉 TY will make again.
